Banana French Toast

Goodmorning everybody! Here is my favorite way to make French toast! It's healthy and so delicious that you don't even need syrup!

Prep & Cooking Time:  10 minutes Total!
Yield: About 8 Slices

Ingredients:
1 banana
1 tsp. Vanilla
Cinnamon to your preference
2 tsp. Sugar (I use Stevia which cuts the sugar down to 1 tsp)
1/4 cup fat free organic milk
1/2 cup egg beaters plain
1/2 cup egg white beaters
8 slices 100% whole wheat bread
**to make this even lighter, use 1 cup egg whites and no egg beaters, and use the 100% whole wheat 45 calorie sliced bread by Sara lee**
Extra virgin olive oil for griddle

Turn on griddle to a medium high heat and add olive
Mash 1/4 of banana until almost a purée & slice the rest for topping
Mix together the remaining ingredients (except for bread) until well blended.
Dip both sides of bread into the batter mixture and place on hot griddle with oil on it.  The banana has a tendency to go to the bottom of the bowl, so spoon it onto the top of the toast and then flip over and finish cooking then top with sliced bananas and strawberries and sometimes I like to top it off with a little Colorado Proud Honey!

Turkey Chili

Yield 4-6 cups
PREP TIME 10-15 minutes
COOKING TIME 20 minutes
Now that fall is almost officially here, I thought I'd share my delicious Turkey Chili! If you aren't a fan of ground turkey you could always buy ground sirloin or very lean ground beef! Whether you are getting ready to sit down on Sunday or Monday for some football, you can put this Chili together in less than an hour and indulge!

Ingredients:
1 lb. ground turkey *Breast* if you buy ground turkey thats not the breast you could be making this dish higher in fat than with some ground beef!
1 fresh banana pepper
5 small to medium sized mushrooms
1/2 white onion chopped
1/2 garlic clove
1 fresh green chili or 1 4oz. canned green chilies
1 15oz. can *no salt added* kidney beans rinsed and drained
1 15oz. can *no salt added* chili beans in chili sauce
1 29oz. can *no salt added* all natural tomato sauce
1 15oz. can *no salt added* all natural tomato sauce
1 15oz. can diced tomatoes with cilantro and lime

Cooking Directions:
Brown ground meat with onions until meat is cooked then add all the fresh vegetables and let them cook for 2-5 minutes with meat and onion mixture.
Add all canned ingredients to a medium sized pot and then combine the meat mixture. Heat until hot and voila you're done!!!
If you are wanting this to be an all day dish, do the same except add to crockpot instead of pot over the stove and let heat, just make sure it doesn't start boiling! Also if you are feeding more than just a couple of people, just double this recipe and if you are feeding a lot of people do double the recipe with everything except the tomato sauce, you can add four or more 29oz cans and still have a great consistency!

ENJOY!!!

Goodmorning Pancakes!

Goodmorning to all of you who want to have a healthy indulgence this morning! Here is a great recipe that you can whip together any morning and get a good boost in the am! First of all, so many people have switched to what they think would be a great low fat fast breakfast by pouring a bowl of special k with low/non-fat milk or even just grabbing a bar on their way out the door. Truth is you could wake up 20 minutes earlier, make these pancakes, wake up your kids tell them they have hot pancakes at the kitchen table and while they are grubbing down, you can jump in the shower and know that they are having a "secret" healthy breakfast and you did too! Research has showed for years that a good breakfast fuels you throughout the day, and carbs are our "genius" for fuel throughout the day!

**With this recipe you can add less or more flour to make a yield to your needs or if you make a big batch you can freeze these and then pull them out anyday and heat them up either in the oven or toaster oven**

Prep Time: 10 minutes
Griddle Time: just watch until they start to bubble then flip & should be done within 30 seconds!

WHOLE GRAIN FLAX PANCAKES
2 cups whole grain flour
1 1/2 cups all purpose flour
1 tbs. ground flax seed
1/2 tsp baking soda
1/4 tsp baking powder (for fluffy pancakes)
1 tsp organic vanilla (or to preference)
1 egg add organic milk to a thin, but not runny consistency!!
cinnamon to taste
Mix ingredients so that the batter is a thin consistency and heat a griddle with olive oil. Pour batter onto griddle into dollar sized circles and when they start to bubble turn cakes over. Top with fresh fruit, light syrup, honey, peanut butter or whatever you would like!

ENJOY
