Banana French Toast

Goodmorning everybody! Here is my favorite way to make French toast! It's healthy and so delicious that you don't even need syrup!

Prep & Cooking Time:  10 minutes Total!
Yield: About 8 Slices

Ingredients:
1 banana
1 tsp. Vanilla
Cinnamon to your preference
2 tsp. Sugar (I use Stevia which cuts the sugar down to 1 tsp)
1/4 cup fat free organic milk
1/2 cup egg beaters plain
1/2 cup egg white beaters
8 slices 100% whole wheat bread
**to make this even lighter, use 1 cup egg whites and no egg beaters, and use the 100% whole wheat 45 calorie sliced bread by Sara lee**
Extra virgin olive oil for griddle

Turn on griddle to a medium high heat and add olive
Mash 1/4 of banana until almost a purée & slice the rest for topping
Mix together the remaining ingredients (except for bread) until well blended.
Dip both sides of bread into the batter mixture and place on hot griddle with oil on it.  The banana has a tendency to go to the bottom of the bowl, so spoon it onto the top of the toast and then flip over and finish cooking then top with sliced bananas and strawberries and sometimes I like to top it off with a little Colorado Proud Honey!
